Chorizo & Spinach Pasta

A hearty spicy pasta dish, perfect to quickly whip up on a weeknight.


  • 2 cooking chorizo sausages
  • 2 large handfuls of spinach
  • 250grams dried pasta
  • 1 heaped tsp tomato puree
  • 1 heaped tsp of roasted red pepper paste
  • 1tsp of oregano
  • Small glass of sherry (or white wine)
  • Splash of sherry vinegar
  • Olive oil
  • Parmesan
  • 📖Method

  • Begin heating a large pan of salted water and add pasta once boiled.
  • Take the chorizo out of the casing and break apart into bite-size bits.
  • Put a pan on a medium heat, add the crumbled sausage with a small splash of olive oil and cook down for about 5 minutes
  • Turn up the heat to medium-high and add the puree & pepper paste, cook down again for another 3-4 minutes.
  • Pour in your small glass of sherry and allow to simmer for a few minutes.
  • Turn the heat back down to medium and add oregano, and a splash of sherry vinegar and stir through.
  • Add cooked pasta with a splash of the pasta water and the spinach.
  • Stir everything together for a couple minutes to wilt the spinach and coat the pasta
  • Serve with a good helping of parmesan and a drizzle of olive oil.
