Leek & Kale Pasta

A super green, and very tasty meal. I feel like its maybe good for you, its just greens and pasta 🤷‍♀️ but I am in no way any good at telling someone what's good for them. It's tasty nonetheless. If you have a go make sure to tag me @ingoodtaste_ on Instagram so I can share them!

🛒Ingredients

  • 250grams dried pasta
  • 1/2 a leek
  • 2 large handfuls of kale
  • Pine nuts
  • Olive Oil (lots)
  • 2 cloves of Garlic
  • Parmesan
  • Chilli flakes (we use Aleppo)
  • Burrata / Mozzarella (optional)
  • 📖Method

  • Fill a large pan with salted water and bring to the boil.
  • Fill a second pan, with water (not salted), and also bring to the boil.
  • Once the salted water is boiling, add your pasta to it.
  • Once the nonsalted water is boiling add peeled garlic cloves (whole), wait 2-3 minutes then add roughly chopped leeks and the kale, allow to boil for 2-3 minutes.
  • Remove veg & garlic from the water and place it into a blender with a glug of olive oil, whilst its blitzing, continue to pour in the olive oil until you a thick sauce-like consistency.
  • When you have a thick sauce-like consistency, transfer it to the saucepan and put it on a low/medium heat.
  • Once your pasta is done, add to the sauce. If you're draining the pasta first, make sure you keep a little of the pasta water aside.
  • Stir pasta through the sauce, add handfuls of grated parmesan, and generous amounts of black pepper.
  • If at this point it's looking a little thick (it probably is) add small amounts of the pasta water until it loosens.
  • Serve & top with pine nuts, chilli flakes and parmesan, we like to add a burrata or mozzarella ball as it goes so nicely, but totally optional
