Leek & Nduja Spicy Pasta
A creamy, spicy and easy to make pasta dish. Nduja has to be one of our favourite ingredients, a good nduja can add so much to a dish, the coupled with soft creamy leeks this pasta really is delicious.
2 medium-sized leeks
50grams of nduja
200grams of dried pasta
1 jelly chicken stock cube
Finely slice your leeks and put them in a large lidded pan with a glug of olive oil, a jelly stock cube, and 100ml of water. Stir for a little to coat the leeks and break down the stock and leave to cook down for 20 minutes until they are soft and creamy.
Whilst the leeks are cooking begin to boil a large pan of salted water for your pasta, once boiled add your pasta.
When your pasta is almost cooked, about 1 minute off, add it to the pan with the cooked down leeks and stir through.
To the leeks & pasta add your nduja, separate it into smaller chunks and scatter it into the pan to help it melt. Continue to stir whilst the nduja melts through.
Add a couple handfuls of grated parmesan, stir through then serve topped with olive oil & black pepper.
