Mushroom & Nduja Pasta
This nduja and mushroom pasta is super simple and very quick to cook up. The nduja adds a nice spicyness and the mushrooms give it an earthyness. Mushroom and Nduja might be my new favourite combo.
🛒Ingredients
150grams of wild mushrooms
50grams of nduja
200grams of pasta
Black pepper
75grams of butter
📖Method
In a large pan, boil salted water. Remember you probably want more salt in it than you think, and also more water in there than you think, looking to have the pasta totally submerged.
Roughly tear your mushrooms into mouth sized chunks and cook in a dry pan, on a high heat until they begin to cook down. At this point, you should also have your pasta cooking.
Once they have cooked down a little add some salt to draw out the moisture & for flavour of course.
When the mushrooms look almost done add your butter and mix through.
Your pasta should be cooked so add it to the mushrooms with your nduja and a couple of splashes of pasta water.
Toss it all together until the pasta is fully coated and the nduja has melted.
Add a nice big helping of black pepper and serve!
