Pigs in Blankets

Pigs in Blankets are the uncontested king of Christmas, in my house at least. They're always everyone's favourite, and why wouldn't they be. This recipe is a super simple way to jazz them up a little.

🛒Ingredients

  • Chipolata sausages (or whatever smaller ones you can find)
  • Smoked streaky bacon
  • Maple syrup
  • Sage
  • Thyme, Rosemary and Bay Leaves (optional)
  • 📖Method

  • Preheat your oven to 200 degrees.
  • Take a large(ish) sage leaf, place on the sausage and wrap in bacon. Try and wrap them so the bacon ends touching the sausage, not the leaf, as it's going to stick better.
  • Line an oven tray with greaseproof paper and place your wrapped sausages, try and have the sage facing up and then ends of the bacon on the tray, this should help avoid any unwrapping happening.
  • Between the sausages, scatter any woody herbs you have, such as bay, rosemary or thyme.
  • Pop in the oven for roughly 30 mins but keep an eye on them. If the herbs are catching just remove it quickly and take them out.
  • When they're looking almost done, at the end of the 30 mins, remove them and drizzle over maple syrup. Pop back in the oven for 2-3 mins.
  • To serve, pick off any herbs that might have gotten stuck, and serve! We scattered a little extra thyme over.
