Quick n' Easy Pink Pickled Onions.

I love these pickled onions, they're really fresh and light and you don't need a lot to make a big difference to your meal. They're the perfect side to chicken schnitzel, tacos, wraps, anything 🙌.


  • 2 Small / Medium Red Onions
  • 2 Lemons or 3 Limes (Roughly 1:1 Onions and Citrus, depending on size)
  • 📖Method

  • Thinly slice red onions
  • Put in a bowl and pour over boiling water then cover for 5 minutes. This removed the harsh oniony-ness.
  • Drain the liquid and pat dry with kitchen paper or a clean kitchen towel to remove any excess water and put it back into a dry bowl.
  • Add finely chopped chili.
  • Squeeze over lemon juice, and make sure everything is well covered in the juice.
  • Cover and leave in the fridge for roughly half an hour or longer.
  • Remove from fridge, and season with salt.
