Quick n' Easy Pink Pickled Onions.
I love these pickled onions, they're really fresh and light and you don't need a lot to make a big difference to your meal. They're the perfect side to chicken schnitzel, tacos, wraps, anything 🙌.
2 Small / Medium Red Onions
2 Lemons or 3 Limes (Roughly 1:1 Onions and Citrus, depending on size)
Thinly slice red onions
Put in a bowl and pour over boiling water then cover for 5 minutes. This removed the harsh oniony-ness.
Drain the liquid and pat dry with kitchen paper or a clean kitchen towel to remove any excess water and put it back into a dry bowl.
Add finely chopped chili.
Squeeze over lemon juice, and make sure everything is well covered in the juice.
Cover and leave in the fridge for roughly half an hour or longer.
Remove from fridge, and season with salt.
