Sardine & Butter Bean Salad
Butter bean & Sardine salad. I know everyone claims their recipes are so easy and done in just a few minutes but this one really is. You get an amazing amount of flavour for pretty much no work - the dream.
Good quality cooked butter beans (450grams drained)
Juice & rind of half a lemon
Handful of parsley
1 tin of sardines in olive oil.
Good quality extra virgin olive oil
Cider vinegar (1tbl spoon)
Chosen extra to mix through (see tips)
Depending on what you're mixing through, chop it into smaller bite-size pieces and add to a large mixing bowl.
Drain your beans and add to the bowl along with the juice & zest of half a lemon, a good pinch of sea salt, cider vinegar and 3 tbl spoons of olive oil. Mix everything through until everything is coated.
Roughly chop the parsley and mix through.
Transfer the mix to your serving plates and top with the tinned sardines.
Season everything with a little sea salt and a sprinkling of espelette pepper.
Finish with a drizzle of olive oil and serve!
