Sardine & Butter Bean Salad

Butter bean & Sardine salad. I know everyone claims their recipes are so easy and done in just a few minutes but this one really is. You get an amazing amount of flavour for pretty much no work - the dream.


  • Good quality cooked butter beans (450grams drained)
  • Juice & rind of half a lemon
  • Handful of parsley
  • 1 tin of sardines in olive oil.
  • Good quality extra virgin olive oil
  • Cider vinegar (1tbl spoon)
  • Espelette Pepper
  • Chosen extra to mix through (see tips)
  • Sea salt
  • 📖Method

  • Depending on what you're mixing through, chop it into smaller bite-size pieces and add to a large mixing bowl.
  • Drain your beans and add to the bowl along with the juice & zest of half a lemon, a good pinch of sea salt, cider vinegar and 3 tbl spoons of olive oil. Mix everything through until everything is coated.
  • Roughly chop the parsley and mix through.
  • Transfer the mix to your serving plates and top with the tinned sardines.
  • Season everything with a little sea salt and a sprinkling of espelette pepper.
  • Finish with a drizzle of olive oil and serve!
