Sausage and Onion Pasta

Sausage and Onion is a great combination, perfect on pizza and perfect through pasta too. This pasta dish is quick enough to do on a weeknight and tasty enough that you want to make it again and again

🛒Ingredients

  • 250grams of spaghetti
  • 1 medium onion
  • 2 good quality pork sausages
  • Olive oil
  • Red wine vinegar
  • 1tsp of dried oregano
  • Pinch of fennel seeds
  • 1 clove of garlic, diced
  • Black Pepper
  • Parmesan to top
  • Pinch of chilli flakes
  • 📖Method

  • In a large pan boil salted water for your pasta
  • Start by taking the sausage out of its casing and crumbling it up into bite-sized chunks
  • For the onion, cut into 6-8 segments, depending on the size of your onion, break apart a little.
  • Bring olive oil to a medium-high heat in a large deep-sided frying pan, once hot add in your sausage meat and fry until browned slightly.
  • Once browned, remove from the pan with a slotted spoon, keeping all the fat in the pan and set aside.
  • Add your onions to sausage fat, stir through and let cook down a little
  • Now would be a good time to get the pasta on.
  • Add your fennel, oregano, chilli flakes & garlic, stir through and continue to cook for about 5-10 minutes, until your onion and garlic are soft.
  • Re-add the sausage meat and cook again for 2-3 minutes.
  • Add cooked pasta to your pan, and stir through. Add a glug of olive oil & the red wine vinegar and make sure your spaghetti is well coated.
  • Serve with parmesan and a bit of black pepper.
