Spicy Nduja Pasta

Nduja is one of my favourite ingredients, it's just fab and it's so easy to make a great meal with. Spicy soft pork that just melts into whatever you put it in... This nduja pasta recipe is super simple, so you're going to want to make sure you're using nice nduja as thats like 90% of the flavour, if you're UK based and you're like, where the hell am I supposed to buy this thing I can't even pronounce, Sainsburys & Waitrose have thier own brand versions but for a super nice nduja, try Natoora, they deliver country wide and everything they sell is 10/10.

🛒Ingredients

  • 250grams dried pasta
  • 3-4 teaspoons of Nduja
  • Half an onion, finely chopped
  • A handful of fresh basil
  • Nice olive oil
  • Parmesan to top
  • 📖Method

  • Begin to heat a large pan of salted water.
  • In a deep-sided frying pan start to soften your finely diced onions in a little olive oil.
  • Once the onions are soft and your pasta is almost done (about 10 mins) add in your nduja and melt through for 2-3 minutes.
  • Directly from the pan, it cooked in, add your pasta to the nduja and onion mix, along with a couple of splashes of the cooking water.
  • Mix everything through and add in your fresh basil + a little black pepper.
  • To serve top with grated parmesan and a drizzle of olive oil.
