Carrot Top Pesto
Carrot top pesto, to stop you putting all those carrot tops in the bin. This is such a great use for something that would usually go to waste, and it's delicious as a dip, on toast and through pasta.
Whole bunch of carrot tops
handful of parsley stalks
75grams of Parmesan
Lemon zest (half a lemon)
Small handful of pine nuts
Salt & Pepper
In food blender, blitz everything but the olive oil.
Once everything is chopped up and combined begin to slowly add olive oil, whilst continuing to mix. You are going to use a lot of olive oil.
Continue adding the olive oil until you have a pesto like texture.
Give it a taste and some extra seasoning if needed.
