Carrot Top Pesto

Carrot top pesto, to stop you putting all those carrot tops in the bin. This is such a great use for something that would usually go to waste, and it's delicious as a dip, on toast and through pasta.


  • Whole bunch of carrot tops
  • handful of parsley stalks
  • 75grams of Parmesan
  • Lemon zest (half a lemon)
  • Small handful of pine nuts
  • Olive Oil
  • Salt & Pepper
  • 📖Method

  • In food blender, blitz everything but the olive oil.
  • Once everything is chopped up and combined begin to slowly add olive oil, whilst continuing to mix. You are going to use a lot of olive oil.
  • Continue adding the olive oil until you have a pesto like texture.
  • Give it a taste and some extra seasoning if needed.
