Christmas Beans

Boston beans, but using the stock from the Christmas ham, so they're Christmas Beans. A great way to use up the very tasty stock your Christmas ham will leave behind. You can use these beans as a great way to use up any odds and ends you might have post-Christmas, this recipe is more of a loose base for whatever you might fancy doing.

🛒Ingredients

  • 1.5 litres of leftover stock from your Christmas Ham
  • 400grams mix of dried beans. 4 tins of using cooked
  • 2 Carrots
  • 1 stick of celery
  • 1 large onion
  • End cuts of roasted ham
  • 1 tin of tomatoes
  • Guajillo, Chipotle & Pasilla Dried chillis
  • Cinnamon stick
  • 📖Method

  • If using dried beans, leave them to soak in water overnight, before using, boil them in freshwater with a couple bay leaves for 45-minutes to an hour.
  • Preheat oven to 120degrees.
  • Whilst those are boiling, in a separate pan, soften diced celery, carrot and onion.
  • Once soft add your dried chilli (blitzed up), cinnamon stick and diced ham.
  • Pour in your stock, and add your beans. If you don't have enough stock you can top it up with the cooking water from the beans.
  • Cook for 5 minutes and then add tinned tomatoes and stir through.
  • Add a lid and slowly cook in the oven for 5hrs.
  • To finish, remove the lid and keep cooking for an additional 45 minutes until the liquid has reduced and the beans are thick.
  • Serve however you like! It makes for a great lunch on top of toast with a little cheese.
